WW Week 2 Update
This week wasn't great, I had circumstances where I couldn't always control what I was eating, but I did the best I could. Also I was only able to work out once, so this morning at my weigh in I was going to be happy if I didn't gain! However I was pleasantly surprised when I had lost 1 lb! I was so glad I got to move my ticker forward rather than backward!

Weight Watchers Week 1 Update
So week 1 of weight watchers went well! I was able to stay within my daily points so that I could save my extra weekly allotment for my weekend with Kayla (my sister). Even with eating out several times I still lost 2lbs at my weigh in! It was fun to be able to change my ticker! I'd like to take a starting picture and then update it every month in the same outfit so it's easier to see the progress. I want to take a picture this week so that my starting picture is as accurate as possible, although I've maintained the same weight for the last several years so technically I can use any of those too. I'd also like to give a GOOD JOB shout out to my sister, who is doing this with me, she lost 2.5lbs this week! WAY TO GO KAYLA!!!!!

Weight Watchers Online!
I signed up for Weight Watchers Online Monday! I've been really good about staying within my "points" range for each day. I do get 40 extra points per week to use, but I haven't used any this week. I am going to visit my sister in the St. Louis Area this weekend so I'm saving them for the trip. My goal is to try to not use them if at all possible. I'm hoping that posting this on here will help keep me accountable! Mondays are my weigh in days so I'll try to update with them (good or bad) each week.

Orange-Cranberry Oatmeal Cookies
I made some of my favorite cookies this afternoon! Don't you just love cookies with oatmeal?! You must try this recipe!
Orange-Cranberry Oatmeal Cookies
1 cup unsalted butter, softened (I used salted because it's what I had on hand and it turned out fine)
2 cups light brown sugar
2 eggs
2 tsp orange zest
1 tsp orange extract
1/2 tsp vanilla extract
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
3 cups oats
2 cups dried cranberries
1. Preheat oven to 350 degrees F.
2. In a large bowl cream together the butter and brown sugar.
3. Add in eggs one at a time until blended.
4. Add zest and extracts.
5. In a medium bowl mix flour, soda, and salt.
6. Add oats to dry ingredients and mix well.
7. Add oat mixture to wet dough and mix thoroughly.
8. Mix in cranberries.
9. Drop by teaspoonfuls onto an ungreased cookie sheet bake for about 10 minutes. They are done when the edges are turning brown but the insides look doughy.
10. Let them cool on the cookie sheet for 4 minutes, then transfer them to waxed paper or a cooling rack to cool.
11. ENJOY!!!
It makes about 4 1/2 dozen cookies using a heaping teaspoon you eat with.

50 Things About Me
1. I was the last kid in my class to lose their first tooth. My front 2 on the top had to be pulled by the dentist.
2. I love cereal, but not for breakfast.
3. The only bone I've ever broken is my pinky toe.
4. I don't like tomatoes, but like ketchup, tomato juice and tomato sauce (as long as their are no chunks.)
5. I am missing a lot of my adult teeth, so the majority of my teeth are baby teeth.
6. I've had glasses since 1st grade. I actually wanted to get glasses before I needed them.
7. I grew up in Carthage, Illinois.
8. I started babysitting when I was 12, for a 9 month old baby.
9. I'm allergic to mosquitoes.
10. My favorite ice cream is cookies and cream.
11. My hair was pin straight as a child until around 8th grade when it turned wavy/curly. When I was little I was always trying to curl my hair but it never stayed, now I have to straighten it.
12. I love going to theater productions.
13. I dream more if I go to bed with wet hair.
14. I learned to knit when I was 10.
15. I always wished I was born in the 1800s.
16. I love all bread products except sliced bread you get from the store. Not really a fan at all.
17. I can hardly wait for each season. I love specific things about each of them.
18. My favorite music is Contemporary Christian. Although I do enjoy 80s and 90s Easy Listening (what I grew up with.)
19. I have to blow my nose every morning.
20. I can't run, but have always wanted to be a runner.

23. I had eye surgery to correct a lazy eye the summer between 3rd and 4th grade.
24. I love riding in the car on road trips but hate driving alone.
25. I have a phobia of tornadoes.
26. I listen to music almost all the time.
27. My favorite color is pink.
28. I love things that sparkle. Especially glitter, my mom used to call me "The Glitter Queen."
29. I've had several dreams that have "come true."
30. I love "period dramas" movies or television shows, but not traditional "westerns".
31. I like dark chocolate better than milk chocolate and don't like white chocolate at all. The only way I'll eat white chocolate is with peppermint in it.
32. I hate startling noises especially popping balloons and refrigerator biscuit can pops.
33. I've never been a big fan of fireworks, they are pretty, but I don't like the noise.
34. I hate wearing coats, but don't like to be cold either, which leaves me in a quandry.
35. If I had to pick from eating a roasted ham or turkey, I'd pick ham. If I had to pick from eating ham or turkey lunch meat, I'd pick turkey.
36. I've babysat for 6 different sets of twins.
37. I was 11 when I learned to crochet.
38. My sister is and always has been my best friend.
39. I got my ears pierced when I was 4. My parents decided they better do it because I kept trying to shove my mom's earrings in my ears and they were afraid I'd hurt myself.
40. My sister and I were due to be born on the same day(different years), but I was born 5 weeks early so our birthdays are 5 days shy of a month a part.
41. I love turtles and ladybugs. I even have a pet turtle "Sarah" I've had her almost 10 years.
42. I love winter storms.
43. Even though my sister and I are 3 years apart people ask us all the time if we are twins, which causes us to answer "no" in unison, which kinda freaks people out.
44. White is the color of vehicle I like least, however both of my cars have been white.
45. I love to shop for clothes, but never buy regular price.
46. My sister and I often show up at the same place wearing the same thing unplanned. We also will frequentlu say the same thing at the same time.

Britt's Knits -n- More

Breakfast On The Go
So yeah, not doing so great on the updating. oh well...better late than never right?!
So my walking challenge was put on hold due to a broken toe. Thankfully my toe is healed and I'm back in my walking shoes!
I tried my first Once A Month Cooking recipe a couple of weeks ago. I made the Breakfast Burritos. I got the recipe from Once A Month Mom's blog. It's just a basic recipe and you can customize it to your own tastes.
I cooked 1 lb of bulk sausage and some onion

then 1 package of refrigerated shredded hash browns.

I set them aside while I scrambled 1 dozen eggs.

Then I combined the eggs, with the sausage & hash browns. To that I added 1 cup of salsa and 1 package of taco flavored cheese.

I used 20 fat free tortillas. They did keep breaking and that may be due to them being fat free, but that was what was on sale.

I put 1/4 cup of the mixture into each flour tortilla.



Wrapped them in foil and placed them in the freezer.
Each morning I just grab one, unwrap and microwave for 2 minutes! It's so handy and yummy!
I also made home made ham & cheese biscuit "hot pockets"
I made a simple white sauce, added 1 package of cheddar cheese and some cut up ham.

Placed about 1/4 cup
into 2 triangles(1 rectangle) of crescent roll dough.


Folded them over and baked them until golden brown on the top. Once they had cooled I wrapped them individually in foil. When I want to eat them I prepare them like the burritos, except only microwave them 1 1/2 minutes. Now I can always have a good breakfast and I'm sure they are healthier than the store ones.
I hope to try some other breakfast recipe ideas that I can eat on the go.

Well Here Goes...
So I'm going to give this a shot! Hopefully I'll have something exciting enough to say that merits publishing on this blog. After recently beginning to follow blogs I've been inspired to begin my own. This will probably be a journal about the daily happenings in my life, nothing earth-shattering and epic but that's fine by me! A few things happening right now are that I've just registered on the Family Circle/American Heart Association's Walking Challenge 2010! From April 12-July 4, 2010; you keep track of your walking mileage daily on their website. At the end of the challenge the person with the most miles wins a trip to Mexico, and the second place prize is a treadmill. Even if I don't win, I'll certainly be healthier! I also am compiling my 101 in 1001 list. Basically its a list of 101 things that you want to accomplish in 1001 days. Some things are short term, some long term, some easier, some more difficult. Actually starting a blog is my number 1 on my list. You don't have to do them in order, just try to do them all. It will probably be difficult for me to do them out of order, though LOL! I've got one down, 100 to go! Well, I'm off to grandma's for the evening!
